Roast Level - Medium-Dark (City+/Full City)

Fragrance/Aroma - Nut, caramel, bit rustic.

Body - Medium and smooth.

Acidity - Sharp and sweet.

Flavor - Brown sugar, roasted peanuts, chocolate.

Aftertaste - Pleasantly smooth.

Notes - This coffee comes from the Don Eduardo farm located in the Oaxacan region of southern Mexico. The green beans are very well processed, though still feature some chaffe on the them. This chaffe (think peanut skin) adds a little flavor to the bean during roasting, adding a rustic element to the cup.Not as clean as the other Pluma, but more personality and flavor in the cup. A medium-dark roast suits this bean well. It brings out the nut and chocolate flavors of the bean while preserving its sweetness. This coffee goes well with desserts, and is also pleasing alone.
